Ground Beef Breakfast Hash
A hearty one-pan breakfast that turns ground beef and potatoes into something crave-worthy. The key is patience: let the potatoes and beef sit undisturbed long enough to build a golden crust before you stir, then crack the eggs right into the hash.

Ingredients
- 1 lb ground beef (85/15)
- 1 lb Yukon Gold potatoes, diced small
- 1/2 onion, diced
- 1 bell pepper, diced
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 4 large eggs
- 2 tbsp neutral oil
- Salt, pepper, and chopped parsley
Instructions
- 1
Heat the oil in a cast-iron skillet over medium-high. Add the potatoes in an even layer and cook, stirring occasionally, until golden and tender, 10 to 12 minutes.
- 2
Push the potatoes aside and add the ground beef, breaking it up; cook until browned, 6 minutes.
- 3
Stir in the onion and pepper with the smoked paprika, garlic powder, salt, and pepper; cook 4 minutes until softened.
- 4
Press the hash flat and make 4 wells with a spoon.
- 5
Crack an egg into each well, cover, and cook 3 to 4 minutes until the whites set but the yolks stay runny.
- 6
Scatter with parsley and serve straight from the pan.
Chef's Tips
- Dice the potatoes small and evenly so they cook through before the outsides burn.
- Resist stirring too soon — a crust needs uninterrupted contact with the hot pan.
- A splash of hot sauce or a dollop of sour cream finishes it perfectly.
